Asian Quinoa Salad

"A healthy & delicious savory breakfast meal"


I love trying out innovative, new and healthy recipes which are easy and quick to make at home ! So i was surfing for healthy recipes and came to know about QUINOA 😍 .

Although the recipes seemed somewhat boring so i tried to elevate my dish with a lot of healthy veggies and toppings 😂😖!!

I am very keen to share it with you guys .

INGREDIENTS 

Boiled Quinoa- 1 Cup

Red Capsicum- ½ finely choppe

Broccoli- 7-8 small florets (Boiled)

Green Capsicum - ½ finely chopped 

Carrot- 1 finely chopped

Tomatoes-1 finely chopped

Cucumber- 1 finely chopped

Olives- 5-6 half sliced

Red Paprika - 5-6

Jalapenos- 5-6 half sliced

Chipotle- 4-5 tbsps

Cottage Cheese- 250 gm (feel free to replace with tofu if you are vegan or lactose intolerant)


FOR DRESSING 

Olive oil- 2 tbsps

Vinegars- 1 tbsp

Lemon Juice- 1 tbsp

Chopped Parsley leaves - 2 tbsps

Salt as per taste 

Pepper- 1-2 tsps

Chilli Flakes- 2 tsp


Directions

  • Soak quinoa for 2 hours then boil it ( cool it before assembling )
  • Mix the boiled quinoa with chipotle and the dressing ( for the dressing mix olive oil, vinegar, lemon juice, parsley leaves, salt , pepper and chilli flakes )
  • Sauté the green and red capsicum with the carrot and add olive oil ,salt and pepper 
  • Dice the cucumbers and tomatoes and put it on top of the quinoa 
  • Top with more dressing , olives and jalapenos evenly spread 
  • Grill paneer in a griller and add salt , pepper and some more dressing and then cut it into cubes to top it off .
  • Brush it with some olive oil to give it a shiny finish
  • Serve it with tomato soup . It is very healthy, appetizing and tempting!!
