 MEXICAN RICE BOWL

"TAKES YOU TO MEXICO" 


INGREDIENTS  FOR MEXICAN MASALA 
1) CUMIN SEEDS- 2 T-SPOON
2) CORIANDER SEEDS - 3/4 TBSP
3) OREGANO-1 TBSP
4) RED CHILLI POWDER -1 TBSP

INGREDIENTS FOR SALSA
1) TOMATO- 4MEDIUM (PUREE)
2) ONION - 1 BIG (CHOPPED)
3) 2 GREEN CHILLI - CHOPPED
4) CORIANDER LEAVES - 3 TBSP (CHOPPED)
5) SALT TO TASTE
6) LEMON JUICE - 1/2 TBSP

FOR MEXICAN RICE 
1) OIL - 1 TBSP
2)GARLIC CLOVES-2 (FINELY CHOPPED)
3) CORN KENNELS -1/4 CUP
4) CARROT - CHOPPED 1/4 CUP
5) CAPSICUM - 1/4 CUP (CHOPPED)
6) KIDNEY BEANS - 1/4 CUP (BOILED)
7) TOMATO PUREE - 1/2 CUP
8) 3 TBSP MEXICAN MASALA
9) RICE - 2 CUPS COOKED RICE
10) SALT TO TASTE
11) CORIANDER LEAVES - 2 TBSP (CHOPPED)
12) LETTUCE

PROCESS:-
 FOR MASALA
1) In a pan add cumin seeds, coriander seeds and dry roast .
2) Transfer it into a plate , add oregano and transfer this mixture into the grinder jar , add salt to taste and grind into a fine powder
3) Transfer this into a bowl , add red chilli powder mix it well and keep it aside for future use 

FOR SALSA:-
1) In a grinder jar , add tomatoes and drind into smooth puree 
2) Transfer half of the puree into te bowl and keep half for future use
3) Add chopped onion, green chilli , coriander leaves with stems , salt and lemon juice then mix well

FOR MEXICAN RICE:-
1) Heat oil in a kadhai , add garlic , onion and saute well
2) Add corn ,carrot ,capsicum, chilli and saute
3) Add kidney beans and cook for 2 minutes , keep them chunky
4) Add remaining tomato puree and add mexican masala and mix well
5) Add cooked rice and mix well
6) Add chopped tomatoes , salt and coriander toss well
7) Garnish with salsa on top and coriander and chopped lettuce
8) Serve hot mexican rice !!
