 MUMBAI-Style "Vada Pav"

(Vada pav+Rains=Love story that will never end 😍💓)


Around 200,000 Vada pav's are eaten in MUMBAI itself, it is a snack that brings a smile on any Indian's face along with a 'Cutting Adrak Chai'(Tea)

Today I'll be sharing my recipe of this mouth-watering ,scrumptious Indian Street snack .
Preparation time- 40-45 mins
FOR THE BATATA VADA (8 portions) YOU WILL REQUIRE:-
1) Oil-2tbsp
2) Mustard seeds-1/2tbsp
3)Curry leaves- 5-6
4) Garlic- 6-7 cloves (finely chopped )
5) Ginger-1/2 inche (shredded/paste)
6) Green chillli-2 ( finely chopped)
7) Turmeric-1/4th tbsp
8) Potatoes - 7-8 ( boiled and mashed)
9)Besan/Gram flour - 3 cups
10)Rice flour - 2 tbsp
11) Salt-1tsp
12)Water
13) Oil

Procedure to make 'VADAs':-
1)Heat the pan add oil, mustard seeds and wait until a spluttering sound comes
2) Add in all the spices+ the mashed potatoes and salt and mix well
3)Add some fresh coriander on top and let it cook for 8-10 minutes
4)Divide the mixture into 8 portions and flatten them a little
5) Make the batter by adding Gram Flour and some water . It should have a ribbon like consistency 
6) Heat oil in a pan 
6) Dip these patties into the batter and fry them until golden brown and then take them out on a paper napkin in a plate

INGREDIENTS FOR GARIC CHUTNEY :-
1) Oil-1/tsp
2) Garlic- 6-8 cloves 
3) Grated Coconut - 3 tbsp
4) Roasted peanuts- 3 tbsp
5) Sesame- 1/2 tbsp
6) Cumin- 1/2 tsp
7) Coriander- 1/2 tsp
8) Salt- for taste'
9) Chilli - 1 tbsp

PROCEDURE TO MAKE GARLIC CHUTNEY-
1) Heat a pan add oil and garlic until golden  then add peanuts and roast it 
2) Then add coconut , and all other ingredients then turn off the gas  and transfer the mixture into a mixer grinder and grind it to a course powder
3) The garlic chutney is ready

PROCEDURE TO MAKE CHURA:-
1) Mix 2-3 tbsp of garlic chutney and water and pour the batter into the heated oil fry until golden brown 
2) Then the crunchy chura is ready 

ASSEMBLY OF VADA PAV:-
1) Cut the pav partially into 2 parts and heat the pan until golden brown with butter 
2) Add the garlic chutney on the top portion and Imli(sweet tamarind) chutney on the bottom portion of the pav (bread)
3) Then add the vada in between the pav and serve and add some chura on the side of your plate !
